{Because cooking really won't kill you}
Lemon Lava Cake
Mr.McHunky has been asking me to make something with lemon and I'm finally fulfilling his request. I love chocolate lava cake and I make it quite often so I figured, why not try a Lemon Lava Cake made in a similar fashion? Hmmmm! It did not disappoint, this turned out so good! Every bite was an explosion of lemon in my mouth. Mr.McHunky even declared that this was the best cake I've ever made!
Ingredients:
1 box Lemon Cake Mix + ingredients
2 boxes Instant Lemon Pudding
2 cups cold milk
1/3 cup sugar
1 1/4 cup water
3 T lemon juice
Powdered sugar, for dusting
Prepare cake mix as directed on package.
Pour cake mix into greased 13x9 baking dish.
Combine dry pudding, milk, sugar, lemon juice, and water in bowl.
Whisk together for 2 minutes until well combined and slightly thickened.
Pour pudding mixture over top of cake mixture. Do not attempt to spread it, just pour it over top.
Place baking dish on top of cookie sheet to catch any drips while cooking. Bake at 350 for 55 minutes to 1 hour.
Allow to cool for 20 minutes while sauce thickens slightly. Sprinkle top of cake with powdered sugar.
Serve warm and be sure to refrigerate any leftovers.
Not that you'll have any leftovers.....yummy!

ReplyDeleteI love lemon! I once ordered a free Jiffy cake mix cookbook, and it had a lemon bundt with cream cheese filling that is so good I could eat the whole thing with a fork in a hallway. (Okay, if you're not a Friends fan, you might not get that reference!)

ReplyDeleteI just made this cake for Mother's Day but it seemed like there was too much liquid. Is is supposed to be 1 and 1/4 cups water? I whisked it and it never seemed to get any thicker and then the overflow when I cooked it was way too much! Did I do something wrong?
ReplyDeleteHmmm, not sure what happened. I double checked my recipe and it definitely is 1 1/4 cups of water. My pudding mixture thickened up pretty quickly with whisking. Did you use skim milk? That might have made the pudding thinner. I just made this same recipe again using Strawberry ingredients and strawberry sauce and it worked just as well. Was your pudding bubbling over the top of your pan when you baked it?
