Apple Pie Enchiladas
I love Apple Pie. I just don't love the process of actually making the Apple Pie. It takes far too long when you have an almost two year old hanging on your legs begging for a snack. So when I saw a recipe for making Apple Pockets I decided to give it a whirl. I tweaked some things to make the dish out of ingredients I had on hand and it turned out fantastic!
Ingredients:
6 Flour Tortillas (8 inch)
1 can (21oz) Apple Pie Filling
2 t ground cinnamon
1/2 cup butter
1/2 cup packed brown sugar
1/2 cup white sugar
1/2 cup water
Spread apple pie filling on plate and cut apples into bite size pieces.
Lay tortillas flat and evenly spoon apple pie filling over top of each.
Sprinkle cinnamon evenly over top of fruit filling on each tortilla.
Roll up each tortilla and place seam side down in a greased baking dish. I used a 9x9 glass dish.
Combine brown sugar, white sugar, butter and water in a saucepan.
Bring mixture to a boil. The reduce heat and simmer, stirring constantly for 3 minutes.
Pour sauce mixture evenly over top of tortillas, reserving a little to pour over ice cream. Go ahead, lick your lips. You know you want to.
Sprinkle with more cinnamon, if desired.
Bake at 350 for 20 minutes.
Doesn't that look fantastic? Look at all those warm apples!
Serve with vanilla ice cream or caramel sauce....or both! Yum. I won't tell you how many I ate, you will think less of me.

ReplyDeleteWow! That looks really yummy. I'll have to try it. I always have tortillas in the house. Have you tried the apple dumpling recipe that uses Mountain Dew and canned cresent rolls? It's easy as well, and really good.
ReplyDeleteI have not tried that one yet but I really want to!
DeleteThis looks amazing. Thanks for sharing the recipe, can't wait to try it!
ReplyDeleteIt was so good! Husband approved and I swear he licked the plate. Haha!

ReplyDeleteI use snapwidget.com but I think it's specifically for Instagram. If you're on blogger you can use the slideshow widget in the layout menu.

DeleteOuuuuuu...nummers!!! Love the idea of using tortillas as opposed to crepes (which I do not do). Thanks for sharing.
ReplyDeleteI have the worst luck with crepes. I've stopped using them to save myself the frustration. The tortillas were super easy to work with!
DeleteYUM! You can think less of me if you want...I can nearly guarantee that I'd eat half that pan by myself.
ReplyDeleteBelieve me, I do not think less of you. I'm ashamed to tell you how many I ate. Haha!
DeleteWow, this is one of the best enchilada recipes I've ever come across! We love having chicken enchiladas for dinner, so we always have a ton of tortillas around. I just might have to try this as soon as apples are in season!
