Creamy Coconut Bars

I love coconut. Matt is not so much a fan of coconut but he does enjoy a good coconut cream pie. I found this recipe awhile back and bookmarked it to try. I bought the ingredients, was all set to make it and WHAM, realized that my pie dish has disappeared. I'm convinced that it went on strike after being forced into service for Thanksgiving last year. So I decided to adapt and make Coconut Bars instead of a Pie. I was really pleased with how they turned out and Matt raved about them! Plus, they are super easy to make!



Ingredients:

1/2 cup Bisquick
1/2 cup sugar
1 cup shredded coconut
4 eggs
1/4 cup butter, melted
2 cups milk
1 t vanilla



Combine all ingredients in large mixing bowl.



Beat on low speed with hand mixer for 30 seconds until combined.



Pour mixture into a greased 9x9 baking dish.



Bake at 350 for 50 minutes.



Watch your family salivate as you make them wait for the dish to cool slightly, then slice into bars.



Eat fast because they will be gone before you can blink!

  17. Oh boy...these are dangerous! So...you know how when you do a link party they ask you to visit the two posters before your's? Well, I stopped dead in my tracks while scrolling down (New Nostalgia) the thumbnails as soon as I saw coconut. LOVE IT. LOVE IT. LOVE IT. This one is a keeper. Easy and yummy.   22. Can I use pancake mix instead of Bisquick?

    1. I'm not sure, I've never tried using Pancake mix. The Bisquick settles at the bottom to form the crust, not sure if pancake mix would do the same thing. Worth a try though!
